1 bag of spinach leaves 1 clementine 2 tablespoons of fig balsamic vinaigrette 2 tablespoons unsalted butter 1/4 cup finely chopped onion 7 tablespoons flour 6 tablespoons finely chopped Serrano ham 3 eggs 2 cups vegetable oil 2 tablespoons olive oil 3/4 cup whole milk 1.5 cups bread crumbs 2/3 cup Manchego cheese Steps 1. Heat butter and olive oil in a medium pan on medium heat until melted 2. Add onion and cook for 3 minutes 3. Add flour and cook while stirring for 1 minute 4. Stir in the milk and mix for 3 minutes 5. Whisk in ham and 1/3 of the cheese to the pan 6. Spread this on to a baking pan and let it cool completely (can put in freezer for faster cooling) 7. In a bowl whisk eggs together and in a different dish mix the breadcrumbs with the remaining cheese 8. Once the ham mixture is cooled, form into balls and dip in egg then in breadcrumb mixture 9. Heat vegetable oil on the stove to 375 degrees 10. Drop in the croquettes to fry until golden brown 11. Make a salad with clementine, spinach, and drizzle on the fig balsamic vinaigrette 12. Place croquettes on top and enjoy
