2 tablespoons extra virgin olive oil 2 large yellow onions 3 tablespoons Hungarian paprika 2 teaspoons dried marjoram leaves 2 teaspoons caraway seeds 2 pounds of beef cubes 1/2 cup red wine 1 cup diced tomatoes 1/4 cup tomato paste 2 bay leaves 1 teaspoon salt 2-3 cups water 2 cups potatoes ( cut into 1/2 inch cubes) 2 cups carrots, diced 1 red bell pepper sliced thinly 1 cup sour cream Steps 1. Heat the olive oil and add onions until they are golden brown 2. Stir in paprika, majoram, caraway seeds and stir for 30 seconds 3. Add the beef and cook until the sides are brown 4. Add the wine, tomatoes, tomato paste, bay leaves, salt, and water and reduce the heat to low 5. Cook for about an hour, stirring occasionally 6. Add the potatoes, carrots, bell pepper and cook for 30 more minutes 7. Serve with a hefty dollop of sour cream
