1/2 Cup whole milk 1/4 Cup water 2 tablespoons sugar 1 packet active dry yeast 2 large eggs 2 tablespoons vanilla extract 3 2/3 cups flour 1 teaspoon kosher salt 14 tablespoons unsalted butter, softened 1 1/3 cups sugar cubes 1 Jar Speculoos cookie butter Steps 1. Slightly warm the milk and stir in the sugar and yeast, then set aside for 5 minutes until foamy 2. Whisk in eggs, vanilla, 1 cup flour, and salt 3. Knead the dough, adding 1 tablespoon of butter at a time, only adding when the last tablespoon is well mixed in 4. Cover the bowl with plastic wrap and leave it in the fridge overnight, then take out and let it sit for 60 minutes 5. After giving a small stir, let it rise for up to 2 hours 6. Put the sugar cubes in a ziplock bag and smash them until they are in pea-sized pieces 7. Knead in the sugar to the dough until well incorporated 8. Divide the dough into 16 parts 9. Heat the waffle iron and place the dough in it, letting them cook for about 5 minutes 10. Let them cook and drizzle Speculoos cookie butter over them
